Chicken Alfredo Lasagna


1 ½ lb Chicken – cubed
2 T Olive oil
1 box Lasagna noodles
20 oz Shredded mozzarella cheese, set aside 1 cup
½ c Parmesan cheese
1 jar Canned alfredo sauce
2 cloves Garlic, pressed
1 t Oregano
1 t Course ground pepper
1 t Salt
2 c Broccoli florets (opt)
2 c Julienne carrots (opt)


Saute chicken in olive oil and set aside. Boil and drain noodles. In a sauce pan, sauté garlic in olive oil. Add alfredo sauce, oregano, pepper, and salt and bring to a simmer. In a 9 X 13 pan layer noodles, sauce mixture, chicken, veggies, and mozzarella cheese. Repeat for a total of 3 layers. Use reserved mozzarella and parmesan cheese to top lasagna. Bake, covered in a 350 degree oven for 45-60 minutes. Remove foil after 30 minutes to allow cheese to brown.
