Popeye Pie

Never thought I'd get my kids to eat spinach!! But once I introduced "Popeye Pie" - my worries were over. So whip it up and slide up to your favorite sailor!


20 oz Frozen spinach, thawed and drained (pretty dry!)
3 c Shredded Cheddar cheese
2/3 c Chopped onion
1 1/3 c Milk
3 Eggs
3/4 c Bisquik
3/4 t Salt
3/4 t Pepper
Tomato slices (optional)


Heat oven to 400 degrees. Grease 10-inch pie plate. In large bowl, mix spinach, 2 cups of the cheese and onion. Pat into pie plate. In a separate bowl beat the milk, eggs, Bisquik, salt and pepper. Pour into pie plate. Bake until knife inserted in center comes out clean (about 25-35 min.) Top with remaining 1 cup cheese and slide into oven just until cheese is melted (about 2 min). Let stand 5 minutes; garnish with tomato slices, if desired.

NOTE: You can substitute broccoli for spinach if you prefer, just don't expect Popeye to join you for dinner!
