Super Bowl Bean Dip

Ingredients:

½ lb Bob Evans "Hot Italian" sausage
½ T Cumin
½ T Chili powder
1 lg Can Refried beans
1 c Shredded pepper jack cheese, divided
10 oz Old English cheese (comes in 5 oz. jars)
1 c Salsa
1 can Chopped green chiles, liquid included
1 can Diced black olives (optional)*

Instructions:

Stir cumin and chili powder into sausage; brown and drain well. Warm refried beans in a saucepan over medium heat, stirring occasionally. Add Old English cheese and ½ c. pepper jack, stirring until melted. Add sausage, salsa, green chiles & olives (if desired). Stir frequently until heated, then top with remaining pepper jack cheese. Cover until jack cheese is melted; serve with tortilla chips, sour cream and additional salsa on the side.

*Note: while the olives are optional, they really do add an important but subtle richness to the recipe. My husband HATES olives of any kind, yet he notices that something is "missing" from the dip when I do eliminate this ingredient
