Baked Beef Stew

Ingredients:

1-2 lbs Lean stew meat cubed
1 Onion, peeled and sliced
4 stalks Celery, sliced thick
6 Carrots, cut in chunks
Potatoes - as many as you want peeled and cut in chunks

Mix
1 t Salt
1 T Sugar
2 T Minute tapioca
1 c Tomato juice
(I triple this when using more than 1 lb. of stew beef)

Instructions:

Place meat in a 9x13 shallow pan. Spread vegetables over meat evenly. Pour rest of ingredients over the meat and veggies. Cover with foil and seal tightly. Bake 4 hours at 250 degrees. I serve over white rice!
