Lemon Bread


2 1/4 c. all-purpose flour
1 1/2 tsp baking powder
3/4 tsp salt
1 1/2 c. sugar
3/4 c. butter
3 eggs
3/4 c. buttermilk
Grated zest of 1 lemon

Juice of 1 lemon
2 Tbls sugar


In large bowl, mix together flour, baking powder, salt, and sugar. Cut butter into dry mixture using 2 knives or pastry blender until it resembles coarse crumbs.

In separate bowl, beat eggs slightly and stir in buttermilk. Add milk/egg mixture to flour mixture. Add grated lemon zest and mix only until moistened.

Spoon mixture into greased and floured loaf pan. Bake at 350F for 1 hour and 15 minutes, until golden. Cool 10 minutes in pan; remove from pan and cool completely on wire rack. Brush cake with glaze. For glaze: Heat and stir lemon juice and sugar for 5 minutes.

Yields 1 loaf
