Blueberry Muffins

Ingredients:

1/2 cup quick oats
1/4 teaspoon baking soda
1/2 cup orange juice
1 - 1/2 cups flour
1/2 cup canola oil
1 - 1/4 teaspoons baking powder
1 - egg
1/2 teaspoon salt
1 cup frozen blueberries
1/2 cup sugar

Topping:
2 - Tablespoons sugar
1 - 1/4 teaspoons cinnamon

Instructions:

Preheat Oven to 400*

In a large bowl mix oats and orange juice (I use frozen concentrated orange juice mixed according to instructions) together let stand. In a smaller bowl sift flour, baking soda, salt, baking powder, and mix well.

Going back to orange juice and oat meal; add egg, canola oil, sugar and frozen blueberries, mix well after each time adding; than mix in flour mixture. Scoop mixture into lined muffin pan with a gravy ladle. Top each muffin with cinnamon and sugar.

BAKE at 400* for 22 minutes to 25 minutes.
