Fresh or thawed fish (Bluegill, Crappie, or Perch)
2-3 10 oz. boxes of any fry mix (Drake’s, Fry Magic, Bass Pro Fish Batter, etc.)
1-2 teaspoons fresh garlic powder (optional)
1-2 teaspoons crushed corn flakes (crush your own, or buy them crushed)
2 cups of milk
Any liquid oil
Deep fryer or pan fryer
Oven safe bowl
Pre-heat oven on warm or lowest temperature. Crush cornflakes by using blender or use the crushed ones you bought. Put crushed cornflakes, and pinch of garlic (optional) in a bowl with fry mix. Using the blender, mix eggs and milk on “liquefy” for 15 seconds. Put in a different bowl than crushed corn flakes. Using your deep fryer or pan fryer, bring liquid oil to 350?-375?. Coat fish with milk and egg mix. Then, coat fish in dry mix. Place battered fillets on plate. Gently place fish in hot oil. Keep fish in oil for 20-30 seconds maximum for a golden brown texture. Place 3 sheets of paper towel (to capture excess oil) in your oven safe bowl. Put filleted fish in bowl and place in oven (to keep warm) while filleting other fish. Enjoy.
