Cashew Chicken


1 lb Chicken
2 T Vegetable Oil
1 Green Pepper
1 Red Pepper
1 sm Onion
8 oz Sliced Water Chestnuts
1 c Chicken stock
½ T Cornstarch
3 T Soy Sauce
½ t Ginger
½ t Garlic Powder
½ c Cashews


Brown sliced chicken, set aside. Wisk together chicken stock, cornstarch, soy sauce, ginger, and garlic powder, set aside. Slightly sauté onions, peppers, and water chestnuts. Add in browned chicken, mix in sauce and heat until sauce thickens slightly. Remove from heat, add cashews, stir and serve.
