1 lb Ground turkey
1 t Vegetable oil
1 Red bell pepper, diced
1/2 c Green onion, sliced
1 1/2 c Baby spinach leaf, sliced
1 1/2 t Ginger, minced or grated
3 cloves Garlic, minced
1 T Soy sauce
1/3 c Hoisin sauce
1/2 t Red pepper flakes (optional)
1/4 c Sliced almonds, toasted (optional)
8 iceberg or bib leaf lettuce leaves, washed, dried
1. Saute red bell pepper in vegetable oil 2 minutes, Add turkey, green onion, ginger, red pepper flakes and garlic. Stir while cooking for 5 minutes, until turkey is no longer pink.
2. Add soy and hoisin sauce. Heat thoroughly for one minute.
3. Place about 1/8th sliced spinach on lettuce leaf, top with 1/8th of the turkey mixture - can be served rolled tightly or as is.
