Chicken BBQ Pasta
1 t Olive oil
½ c Chopped red onion
1 clove Garlic, minced
4 Boneless, skinless chicken breasts, cut into 1" cubes
2 c Sliced mushrooms
1 c Chopped green pepper
1 c Spaghetti sauce
1/3 c BBQ sauce
5 c Dry rigatoni (or any other pasta)
½ c Shredded cheese (any kind works)
Heat oil in a large, non-stick saucepan over medium-high heat. Add onions and garlic, cook and stir 1-2 minutes until onions are soft. Add chicken and cook until no longer pink. Add mushrooms and green pepper, cook until tender. Add spaghetti sauce and BBQ sauce. Stir well. Reduce heat and simmer 5 minutes.
Cook rigatoni according to package directions. Drain well, add to chicken and veggie mixture. Spoon pasta onto plates and top with cheese.
